Pan Roasted Baby Artichokes

Artichokes are delicious but for the price you have to throw away too much of the leaves to get to the part that can be enjoyed. So when I was in the store last time I saw a lady pick up about 20 boxes of the baby artichokes and the grocery store stocker called her to pick them up and when I asked her she said that the reason she likes the baby artichokes is because there is not much of the leaves to pick out and more of the heart that can be enjoyed. I brought a box home which had about 25 artichokes. I wished I had picked up a couple more boxes. because the next time I went back there were no baby artichokes.





The cooking with artichokes is pretty simple. Remove the outer leaves till you get the white heart and then boil them and roast or stuff or whatever you wish to do. I simple roasted them and they were delicious and disappeared in no time.

Clean the artichokes and add them to the bowl of water with vinegar or lemon juice.
Set a pot of water to boil.
Add the artichokes and cook for 5-6 minutes and drain when done.
Heat a cast iron pan, add oil and when hot add the drained artichokes and salt and pepper and turn off the heat in 3-4 minutes.

Enjoy as a snack or on top of salads.




Pan Roasted Baby Artichokes
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Ingredients
  1. 15-20 Baby Artichokes
  2. 1/2 lemon or 2 tbsp white vinegar
  3. salt to taste
  4. 1/2 tbsp black pepper powder
  5. 2 tsp of olive oil or any oil

Method
  1. Keep a bowl of cold water ready and add the lemon juice or the vinegar.
  2. Remove the outer leaves of the baby artichokes and remove the woody stem portion from the end. Cut the chokes in half and add them to the water.
  3. Now boil a pot of water and when hot add the cut chokes into the water and cook for about 5-6 minutes till a knife poked at the heart comes out without resistance. Drain the chokes completely.
  4. In a cast iron pan add oil and when hot add the chokes, salt and pepper, sauté them around for 3-4 minutes. Serve hot.
