Spicy Egg Fry

Eggs are an important part of our diet, they are tasty and healthy and everyone likes them. I may be biased but our chickens lay the best eggs in the world :) Since everyone in our house likes any recipe made with eggs I am always on the look out for more egg recipes. I saw this on a YouTube channel - Dindigul Food Court - Egg Pepper Fry.

Farm Fresh Eggs

Made with slight modifications with ingredients I had on hand and grown in the farm :) including tomatoes, jalapeƱos, coriander leaves and garlic. I don't have to talk about home grown tomatoes, they make whatever dish they are added into exceptional in taste.

Spicy Egg Fry in pictures,
Get the onions, garlic, ginger and tomatoes ready.
In a wide mouthed pan heat oil, saute the onions and green chilies, followed by the ginger and garlic.
Add in the tomatoes and let it cook till it becomes mushy.
Add in the chopped coriander leaves and cook till the gravy thickens. Now add the eggs one by one.
Break all of the the eggs. Do not break the egg yolks. Cover and let cook for a couple of minutes till it sets.
Using the spatula cut the eggs and flip them over. The eggs should be in chunks. Cook for a few minutes and turn off the heat.

Preparation Time:10 minutes
Cooking Time:15 minutes
Ingredients
  1. 5 eggs
  2. 1 cup of sliced onions
  3. 2 cups chopped tomatoes
  4. 1 tbsp of chopped garlic
  5. 1/2 tbsp of grated ginger
  6. 2 green chilies or jalpeno chopped
  7. a handful of coriander leaves
  8. 1/2 tbsp pepper powder
  9. salt to taste
  10. 2 tsp oil
Method
  1. In a wide mouthed pan, heat oil and when hot add the onions and green chilies and saute till the onions turns color. Add in the ginger and garlic.
  2. Add tbe tomatoes and let it cook till it gets mushy. Add in the coriander leaves, pepper powder and salt and continue to cook till the gravy thickens.
  3. Break the eggs on to the gravy. do not break the yolk, break all the eggs and cover the pan and let it cook till the eggs cook a bit about 2-3 minutes.
  4. Open the lid and using the spatula cut the eggs and flip them over and continue to cook till the egg is solid. Should take about 5 minutes.
  5. Turn off the heat and take care not to overcook.

Boiled Eggs in an Instant Pot - Easy to Peel!

Boiled Eggs you say? The easiest thing in the world and why write a post about it? But here is the problem, whenever eggs are cooked in a sauce pan, the peeling of the eggs are a pain. I bet most of you have had this problem. Cook for 8 minutes exactly, cook and then pour cold water, immerse in the ice bath, none of them instructions worked. I mean the eggs were cooked alright but when I peel them, half the cooked egg ended up in the compost pile. I could never peel them without nicks and bruises!

DD2 loves boiled eggs and while that is the easiest thing to do but... I have also heard that fresh eggs have problems while peeling the shells but we have chickens which means fresh eggs are all we've got :)

Anyway this is until I started using the Instant Pot. It took a while to start using the Instant Pot for boiling eggs but once I started and figured it was perhaps the easiest method to deal with those pesky egg shells.

If you do not have an Instant a pressure cooker works just fine, cook for one whistle.

Take the eggs in an Instant Pot and set it to either Egg setting (5 minutes) or Manual 8 minutes depending on if you want soft or hard boiled eggs.
Once cooked cool the eggs by adding cold water.
Peel the eggs as easy as peeling a clementine :)

Boiled Eggs in an Instant Pot
Cooking Time: 8 minutes
How to do it?
  1. Take the eggs in the Instant Pot with enough water.
  2. Turn on the Egg setting which is 5 minutes for soft boiled eggs and Manual 8 minutes for hard boiled eggs. Turn off when done.
  3. Let the pressure release normally.
  4. Add some cold water to the pot and once the eggs are warm to the touch you can start peeling the eggs.

Coop to Plate - Quiche on a stovetop

The farm welcomed some chicks in the summer and the young chicks have become old enough now to give us fresh eggs everyday. Chickens are a pretty self sufficient bunch. The toughest part about having chickens is to keep them from being eaten by predators. Once they are protected and kept warm they are generous with their eggs. The roosters are interesting and pretty protective of their flock. The flock as it gets comfortable follows people around. DD2 is their most favorite person as she is their caretaker supplying them with water and food daily!





We are eating a lot more eggs and also trying to find new and exciting ways to eat them. DD2 loves taking eggs to school and quiche is one of her favorites but to cook quiche is the morning is a time consuming affair so I had to devise a quick and easy way to cook them. If you have about 20 - 25 minutes to spare in the morning that is. Don't laugh I know 25 minutes in the morning is a stretch but food is more important than anything else right? If you can find the time you would be more than satisfied. This quiche can become a quite filling and scrumptious breakfast or a fantastic lunch with some pita pockets or ciabatta bread or to keep it gluten free just by itself.



Normally I spend about 20-30 minutes getting lunch ready for school for the past 15 years, it used be for both DD and DD2 but now with DD in college it is just for DD2. But the good thing is in the process I get my breakfast ready as well. While a lot of people skip breakfast, it is one my important meals. The days I eat a good breakfast I am not looking for filler foods to get me through to lunch.



Saute the onions and bell peppers.
Saute the mushrooms and add in the pepper and salt. Cool completely.
Break the eggs into a whisking bowl and add more pepper if required.
Add in the cooked vegetables and cheese and mix together.
Spray the oil and add in the egg mixture, cook on side, flip and cook on the other side.

I used bell pepper, mushrooms and onions. You can add spinach zucchini or if you have access to drumstick leaves that would be a fantastic addition. If you have some spicy chicken sausage by all means add that as well ;)



Quiche in a Pan
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients
  1. 5-6 eggs
  2. 6-8 mushrooms chopped fine (I used white button mushrooms)
  3. 1/2 bell pepper chopped fine
  4. 1/2 cup red onion (or shallots) chopped fine
  5. 1 tbsp shredded Parmigiano - Reggiano cheese (any shredded cheese of your liking)
  6. 2-3 tsp of oil
  7. 1/2 tsp red pepper or black pepper
  8. salt to taste
Method
  1. In a small cast iron or wide mouthed pan add oil and when hot add the onions and saute till the onion becomes translucent.
  2. Add the bell pepper and saute till they start to get some color, followed by the mushrooms along with the salt and pepper.
  3. Cook for a couple of minutes more and turn off the heat and let it cool for a couple of minutes.
  4. Break the eggs into a whisking bowl and add in the cheese, more pepper if needed and the cooked vegetables. Whisk it so they are mixed in nicely. No need to over whisk.
  5. Now heat the small size cast iron pan if you want for individual pieces of quiche or a bigger pan one big size quiche.
  6. Spray the pan and when hot add in the egg mixture. Let it cook one side for about 2 minutes or so, I like it to be browned a little bit. If you prefer it lighter flip when the bottom is cooked.
  7. Flip and cook on the other side for a couple minutes more.

Paired with a glass of banana - peach smoothie a happy breakfast is ready where nobody complains.

Vegetables Stuffed Egg Wrap - Vegetables Stuffed Omelette Burrito - Breakfast on the Go!

Eggs are perfect for breakfast and they make a great sandwich filling. Even vegetarians give a passing grade to eggs. They came in handy for packing lunches and kids don't complain too much when eggs are on the menu.

We don't have Cable TV or satellite TV and that means I don't get to see my favorite Food Network all the time. I happened to catch a cooking show in the morning one day when I saw Bobby Flay talking about breakfast on the go. Very similar to the Bengali version of the egg wrap - Kati Roll. He spooned some cooked sausage on to the omelette and then rolled it into the tortilla and some tasty breakfast was ready. Seemed like a perfect meal for a busy morning.





Good way to use some of the bit and pieces of vegetables you have to use this is a perfect way to use them. I used zucchini you can easily use mushrooms, cabbage or even minced green means and carrots. As for the wrap I used home made chapathi or you can use store bough tortillas.




Prepare the vegetables for the filling. Make the omelette and keep it ready.
Use a ready made wrap or a home made flat bread like chapathi. Sprinkle cheese on the omelette and when it melts add the vegetables.
Roll the omelette in a tube and place it on the wrap and roll it.
Place a wax paper and roll into a ready to go breakfast :)




Vegetables Stuffed Egg Wrap - Vegetables Stuffed Omelette Burrito
Preparation Time:15 minutes
Cooking Time:30 minutes
Ingredients
  1. 2 Zucchini diced into small pieces
  2. 1/2 cup of finely chopped onions
  3. 2 tsp black pepper
  4. salt to taste
  5. 4 eggs
  6. 4 tortillas or home made Indian Flat bread like roti/chapathi
  7. 1/4 cup of grated cheese
  8. sliced pickled jalapeno peppers (optional)
  9. 1 tsp oil

Method
  1. Cook the vegetables first, heat oil in a saute pan and when hot add the onions and when it starts to get translucent, add in the diced zucchini and saute till it becomes soft. Add in the salt and pepper. Turn off the heat and set it aside.
  2. Now beat the eggs with salt and pepper and beat so it is nice and frothy.
  3. heat the omelette cooking pan and make the omelette and cook it on both sides.
  4. Spread cheese on the omelette and let it melt. Add some of the cooked vegetables, pickled jalapeno and roll the omelette.
  5. Heat the tortillas or the chapathi and place the rolled omelette on and roll into the wrap like a burrito.
  6. Place it on a wax paper and wrap it ready to go. Add them favorite sauces if you want.
  7. Note:You can make all the omelettes in one shot and assemble them later. Keep the wraps warmed up, ready to go.
