Grain of the Week - 27 - Varagu Arisi - Kodo Millet

Varagu Arisi in Tamil or Kodo Millet is primarily grown in India and is recommended for people with diabetes because of its low glycemic index. Like other millets this crop is resistant to drought and is grown in areas where there is not enough water.



Varagu arisi can be cooked just like rice and can easily be substituted for rice. Of course it can be used to make dosai and paniyaram. It is an excellent source of fiber and is also gluten free. It also has minimal amounts of iron and calcium.
