Potato Masala and Chappathi

Monday is a hard day to cook especially if you had gone to parties or friends for a get together.

Potato Masala
Recipe for about 4 people

Red Onion 1/2 cut into thin slices
Tomatoes cut into small pieces
garlic 4 - cut to small pieces
green chillies - slit
ginger 1/2 inch piece grated
red chilly powder 1/2 tbsp
Potatoes - 8 medium sized (boiled and peeled and mashed)
mustard,cumin,curry leaves

Take a pan, oil season with cumin, mustard curry leaves, add the curry leaves after the mustard starts to pop. ADd the onions and green chillies and fry the onion till translucent, add the garlic and ginger. Add the tomatoes and when they turn soft add the chilly powder. If desired at this point you can add peas and/or diced carrots and let them cook. Add salt and then the mashed potatoes, keep the potatoes chunky if desired. Mix well add a little water and cook. Make it watery or thick.


This goes well with any Indian bread or (masala) dosai. Or a good sandwich
